Avoiding the freshman 15, eating healthy in college

Watch portion sizes when eating out, Fitch-Hilgenberg said, "And don't just buy the biggest size because it's the cheapest." Bring half of the meal home for lunch or dinner for the next day, she said.

"Sour cream can be a killer, and guacamole is definitely good, but hit the salsa," Fitch-Hilgenberg said. For those concerned about the extra calories, use mustard in place of mayonnaise, order salad dressing on the side, taste the food before seasoning it, and use condiments sparingly, she said.

Fitch-Hilgenberg came back to teach at the UA after receiving some of her education at the university. She has taught at several schools and worked for Kraft Foods.

Fitch-Hilgenberg is starting a research project on perceptions of body image and body mass index. Pre-adolescents, adolescents and college students will be surveyed to determine an appropriate modern body image, she said.

By teaming up with the fashion apparel department and using its 3D body scanner when collecting data, students in area schools with home economics classes will be able to make their own clothes, Fitch-Hilgenberg said.
